Chocolate Caramel Cups

These delicious chocolate caramel cups are easy to make. They have both of rich chocolatey and indulgent caramel flavours. No bake recipe. Nuts Free. Dairy Free. Vegan. An our Coffee Coconut Chips make the perfect crunchy topping.

You will need :

1/4 cup of coconut flour
2 tbsp of sunflower seed meal
1/4 cup of pepitas meal
3 tbs of coconut butter 1tbs of almond butter.
1 tsp of maple syrup if need to add a bit sweetness.
Combine all ingredients together. You should get a thick and sticky base, if not sticky enough add more almond butter.

Caramel layer:
5 dried figs soak in the water until very soft
1 tsp of almond butter
Drain and reserve water from figs. Blend figs with a splash of reserved water and almond butter using a stick blender.Add more water if the caramel is too dry.

Chocolate ganache coating:
1.4 cup of coconut cream
75-80 grams of dark chocolate (1/4 part of Whitaker Dark Chocolate)
Melt chocolate using a double boiler. Pour coconut cream and mix it well.

Place base into muffin mould, pour over a caramel layer, smooth out with a spoon and then pour over the chocolate ganache on a top. Freeze for 2hours.

Quick Tip:
Mixing melted chocolate with coconut cream makes the chocolate cups easier to bite.
